Perigord Winter Black Truffles

Tuber melanosporum, called the black truffle, Périgord truffle or French black truffle, is a species of truffle native to Southern Europe. It is one of the most expensive edible fungi in the world. Perigord truffles bear a pungent, musky aroma that is likened to a combination of garlic, forest floor, nuts, and cocoa. The truffle’s flesh contains a robust, subtly sweet, savory, and earthy flavor with notes of pepper, mushrooms, mint, and hazelnut.
