Blue Swimmer Crabmeat
Portunus pelagicus, also known as the blue swimmer crab is a species of large crab found in the Indo-Pacific, including off the coasts of Indonesia, Malaysia, Cambodia, Thailand, the Philippines, and Vietnam; and in the intertidal estuaries around most of Australia and east to New Caledonia. The crab meat is translucent when raw and white when cooked, it has a mild, sweet, nutty flavor, low oiliness and is moist, evenly textured and firm (claw meat is firmer than that found in body and legs).
