The Petrale sole is an edible flatfish of the family Pleuronectidae. It is a demersal fish that lives on sandy bottoms, usually in deep water, down to depths of about 550 meters. Petrale Sole are considered to be the most flavorful and desirable of Pacific Flounders. They have a mild, delicately nutty, sweet flavor with small, firm flakes. They are an excellent source of low-fat protein and calcium.
