California White Sturgeon are often compared to the Caspian Sea species, Osetra, as the characteristics are very similar. They are native to the waters & rivers of the Pacific coast region & raised through sustainable means of aquaculture in northern California. White Sturgeon caviar has a soft, medium-sized pearl with hues ranging from glistening onyx to tawny brown and a light nutty taste.
